I have a question for you. I want to purchase a wireless thermometer for my weber charcoal grill. I want to just buy one. Is it necessary to have two different ones? I like the first one on your list down below (the red one) a bit better. What do you suggest I do? Also, my grill doesn't have a built in thermometer on the lid. Should I install one of those too or should I not bother. Thanks in advance...

Soo 195 is early and you need more wood. Plus you wrapped a little early. Try for 165 next time. Or when the crust was set. Yours was still bloody. But def awesome how well the charcoals did. My I suggest a slow and sear. Better to keep all the heat to one side and the rotate the meat!

If I had used room temp water then the grill would need to also get the water warm which would take some time. So to have everything hot from the start I decided to boil the water.

I seen some comments about the evils of starter fluid; How about cooking with black left on the coals? Let that stuff all turn white first. Don't put any food on while there's any black left. That's really bad for you. Gotta let it turn all white first. What the heck are you doing cooking before the coals have turned white?! Forget using fluid to judge if someone knows what they're doing - cooking while there's still black in the coals is how you can tell that someone REALLY doesn't have a clue what they're doing.
